What's for dinner tonight?


Chicken Ranch Enchiladas

Stolen (w/ love and thanks) from Annie's Eats blog.

They're in the oven right now. I'll let you know how they turn out soon!

UPDATE: They were delicious! I made a few changes including adding tomatoes to the sour cream, ranch and chicken mixture. I also covered the rolled enchiladas with cheese and salsa before going in the oven. An easy recipe if you need a last minute meal idea.
